The very 1st vermouth from Neuchâtel area.

The category "vermouth" gets its name from the german word "wermut" which also means wormwood (Absinthe in French). Every vermouth in the world (or most of them) use the wormwood plant during the maceration with the wine.
Neuchâtel is also known to be the birthplace of "Absinthe" an apéritif drink made with the same plant. With a long tradition of apéritif / spirit making using herbs and wonderful wines getting more attention every year, Neuchâtel was the best place to start this project.
We thought it would be great to combine both of those worlds to create this unique beverage.
We collaborated with Distillerie La Malicieuse, located at in La Chaux-de-Fonds to elaborate the recipe. For the wine, we went to see Benoît from Domaine de Montmollin to get organic Chasselas. This wine estate is located in Auvernier, the city of Neuchâtel.
This is an apéritif made mostly with wine. To this wine we add plants, fruits, a bit of sugar and wine-based alcohol for a short maceration. Vermouth is well known in Italy, South of France and also in Spain. A traditionnal apéritif that is now doing a wonderful comeback.
Less alcohol than spirits, more taste and a drink you can enjoy by itself or in cocktails.
